“ This is the Padova branch of the famous Neapolitan pizzeria chain, Sorbillo. First, it's worth noting that in Naples, there are actually two pizzerias with the Sorbillo family name: Gino e Toto Sorbillo and Antonio e Gigi Sorbillo. The more widely known one with multiple branches is the former — Gino e Toto Sorbillo. While some Gino Sorbillo locations hold AVPN certification, this particular branch does not. However, the ingredients used here — including the flour and tomatoes — are AVPN-certified, just like at the other branches. Interestingly, this was my best experience at a Sorbillo so far. The dough, both in terms of texture and flavor was noticeably better than at other locations. I particularly enjoyed the cornicione (the puffed-up, thicker edges of the crust) and the Terre Francescane olive oil. Overall, a pretty good representation of a Neapolitan Pizza. My only criticism was the slightly overcooked cheese (you should never see any browning). The restaurant itself is clean and impressively well-run, even during busy hours. Located in a popular neighborhood, it tends to be packed in the evenings, but turnover is fast — expect a wait of only about 5–10 minutes. It’s a three-story establishment, and quite uniquely, the baking oven is located on the middle floor — something I’ve never seen before. ”

“ Right in the centre of town, we tried it at peak time with no reservation. The place is quite big, it was a cold day and in the ground floor dining area it was a bit cold. The place was pretty full, we got a table right away but got a very long wait for our food. The pizza was good, though the interpretation of ingredients was at times minimalistic (basil as ingredient meant a single tiny leaf in the middle of the pizza). Service was cordial, the bill for the three of us was €56 (one pizza and one soft drink each). ”

“ Great pizza option in Padova. I like the fact that they restored tastefully a whole historical building (3 floors) and that it’s been brought back to life. Good pizza and good selection of choices, very decent prices, good punctual service. ”
